Evelio Lasso cultivates coffee on a high-altitude farm in the remote Nariño region of Colombia, producing a low-intervention, fully washed microlot with extended fermentation. The coffee’s complex flavors, along with its creamy structure and bright acidity, come naturally from the bean itself rather than heavy processing. The variety, called Chiroso, gets its name from its scrappy plant appearance and elongated fruit shape, originally thought to be related to the Caturra variety. However, genetic research by RD2 Vision suggests that Chiroso is actually directly linked to an Ethiopian landrace, not Caturra.
