Beneficio San Diego, established in 1888, is the most modern coffee mill in Costa Rica, known for its continuous innovation and focus on high-quality coffees from the Tarrazú and Tres Ríos regions. The mill emphasizes efficiency, quality, sustainable practices, and strong community relationships. It plays a leading role in the honey process—a method that originated in Costa Rica—where some or all of the mucilage is left on the bean during drying, resulting in a naturally sweet flavor. Each honey-processed coffee is unique, beginning with carefully selected ripe cherries and dried slowly on African beds or patios to enhance complexity and sweetness.
