The Valle del Cauca in Colombia is a vital region for biological conservation, recognized for its World Heritage-listed national parks, wildlife, and water sources, with farmers and organizations dedicated to sustainable agroecology and ecotourism within a stable microclimate at 1,700-2,100 masl. This area is also notable for its innovative use of sugarcane in the decaffeination process; ethyl acetate, derived from fermented sugarcane molasses, is used to naturally extract up to 97% of caffeine from coffee beans through a direct solvent-based method, effectively preserving the coffee's original flavor attributes.
